Álvaro's Christmas Menu and Making New Traditions

What do you think of when you hear the word feast?  I automatically think of Thanksgiving, but in Spain, there are TWO big feast days, back to back. On Christmas Eve and Christmas Day, like the Who's in Whoville, we sit down to feast and feast and feast!
¿Qué piensas cuando escuchas la palabra festín? Yo pienso automáticamente en Acción de Gracias, pero en España, hay dos grandes banquetes, espalda con espalda. En La Noche Buena y en el día de Navidad, como los Who en Whoville, nos sentamos para darnos un festín y... banquete y banquete!

Thanksgiving, invariably has flavor associations of turkey, stuffing, potatoes, yams and everything pumpkin. Similarly, these two Spanish feast days have their traditional dishes that are savored year after year.  So, this year, as the days moved closer to "the Feasts"  Enrique and I began to look at each other with raised eyebrows. We read the huge dilemma on each other's mind. Normally he eats vegetarian and I eat vegetarian and raw when possible. Things might not be too tricky especially since we've both settled into our years and bending our preferences for certain occasions.

Del mismo modo, estas dos fiestas españolas tienen sus platos tradicionales que se degustan año tras año. Así, este año, según los días se acercaban a "las fiestas" Enrique y yo empezamos a mirarnos con las cejas levantadas. Leíamos el gran dilema en la mente del otro. Normalmente él come vegetariano y yo como también crudívora, cuando es posible. Las cosas podrían no ser demasiado difíciles, especialmente porque ambos ya somos mayorcitos y sabemos adaptar nuestras preferencias según las ocasiones.

Often we joke about the response we get at most restaurants when we ask if there is a vegetarian choice on the menu. The waiter will dutifully begin to list all of the fish and seafood possibilities. Truthfully, there might be nothing for a vegetarian to eat in many places in Spain.  Well, that's our excuse/reason for accommodating many times. This year, however, son Álvaro would be joining us for the Feasts and had become strictly vegan, which I might add, to my delight. 
A menudo bromeamos acerca de la respuesta que recibimos en la mayoría de los restaurantes cuando preguntamos si hay una opción vegetariana en el menú. El camarero obedientemente comenzará a enumerar todas las posibilidades de pescado y marisco. A decir verdad, puede que no haya nada que comer para un vegetariano en muchos lugares de España. Bueno, esa es nuestra excusa / razón para ceder muchas veces. Este año, sin embargo, el hijo Álvaro se uniría a nosotros para las fiestas y se había convertido en estrictamente vegano para mi deleite, podría añadir.

But, now, what would happen with our Christmas family feasts? More specifically, and this is REALLY important in Spain, who would want to eat what, who would make what dishes, and oh my, how would this all turn out leaving everyone happily fed?!
Pero, ahora, ¿qué pasaría con nuestro banquete familiar de Navidad? Más en concreto, y esto es realmente importante en España, ¿quién querría comer qué, quién haría qué platos, y ¡oh, ¿cómo todo esto resultará dejando a todos felizmente alimentados?!
First, I'll mention that usually fish is served on the first night, and precious sister Olga brought a carefully elaborated meal to share. She brought four enormous trays of Stuffed Red Peppers, two filled with cod and two with meat.
En primer lugar, voy a mencionar que por lo general el pescado se sirve en la primera noche, y la preciosa hermana Olga trajo una comida cuidadosamente elaborada para compartir. Ella trajo cuatro enormes bandejas de pimientos rellenos, dos con bacalao y dos con carne.

But, from there a Christmas culinary miracle happened. Álvaro surprised us with an email saying, "Don't worry, I have the entire menu planned:
Starting with Christmas Eve I thought we'd have a Seitán Roll...  and from there he laid out a fabulous list, one course after another, to delight any palate.
Pero, a partir de ahí sucedió un milagro culinario de Navidad. Álvaro nos sorprendió con un e-mail diciendo: "No os preocupeis, tengo todo el menú planificado: Empezando con la Nochebuena pensé que tendríamos un Asado de Seitán Relleno..." y continuaba exponiendo una lista fabulosa, un plato tras otro, para deleitar cualquier paladar.

My simplest description of the Seitán Roll is that it was made with herbs (parsley, oregano, sage and basil) and stuffed with dates, prunes, onions, walnuts, hazelnuts, cashews, sage and herbs and topped with a delicious mushroom sauce made with white wine.
Mi descripción simple del asado de seitán relleno es que fue hecha con hierbas (perejil, orégano, salvia y albahaca) y rellena de dátiles, ciruelas pasas, cebollas, nueces, avellanas, castañas de cajú, salvia y hierbas y cubierto con una deliciosa salsa de champiñones al vino blanco.

Álvaro has valiantly, for health and animal advocacy reasons, become not just vegetarian, but strict vegan. He was even a cellist in a fund raiser to benefit more humane treatment of animals just a couple months ago. But, back to the fabulous menú ....

Álvaro se ha convertido valientemente no en simple vegetariano sino en estricto vegano, por razones de defensa de la salud y de los animales. Incluso actuó como violonchelista y organizó un evento para recaudar fondos en beneficio de una asociación protectora de animales hace apenas un par de meses. Pero, de nuevo al fabuloso menú...

Part of me wants to say that there is nothing more heartwarming than seeing a father and son side-by-side creating a delicious meal, but then I also grin and say there isn't anything more attractive, either, than watching two fabulous chefs cooking together in the same kitchen. Both things are true.
Una parte de mí quiere decir que no hay nada más reconfortante que ver a un padre y su hijo codo con codo en la creación de una deliciosa comida, pero entonces yo también sonrío abiertamente y digo que no hay nada más atractivo, tampoco, que ver a dos chefs fabulosos cocinar juntos en la misma cocina. Ambas cosas son ciertas.

Now, I thought I had died and gone to heaven with the Christmas Eve meal, but I had no idea what was in store for us and by far my favorite, was the meal that awaited us on Christmas Day. If you've never had Creme of Chestnut Puree, it is the most delicious thing ever since my Butternut Squash & Sage Soup.  There isn't any picture that would do it justice. Just suffice to say that now it is going on our list of favorites.
Ahora, pensaba que me habría muerto e ido al cielo con la buena que fue la cena de Nochebuena, pero no tenía ni idea de lo que estaba reservado para nosotros y, sin duda, mi favorito, fue la comida que nos esperaba el día de Navidad. Si nunca has tenido Creme de puré de castañas, es la cosa más deliciosa que desde que mi Butternut Squash & Sage sopa. No hay ninguna imagen que lo haría justicia. Baste decir que ahora va incluida en nuestra lista de favoritos.

Remembering That Advent Promise

Keeping my advent promise, blessings have abounded and I give God my highest Praise. Here are some of the outstanding ones, for which I am grateful since that first candle:

My precious husband, Enrique, and all his support, jokes and love.

Barter-Exchange- Professional physical therapist, now owner of El Centro de Masaje Bienestar (The Wellness Center of Massage) and singer, Yolanda. She has searched for just the right person to translate songs, to sing the pronunciation with her and explain the depths of meaning in her favorite English language songs in a way they won't lose their soul and impact. I had wished since I was in high school for my own private masseuse. It's a match made in heaven.
El Trueque. Fisioterapeuta profesional, ahora propietaria de El Centro de Masaje Bienestar (The Wellness Center de masaje) y cantante, Yolanda. Ella ha encontrado en mí la persona adecuada para traducir canciones, para cantarlas con la pronunciación natural y explicarle las profundidades del significado de sus canciones favoritas del idioma Inglés de manera que no pierdan su espíritu e impacto. Yo había deseado desde que estaba en la escuela secundaria mi propio masajista privado. Es la coincidencia perfecta.

An Unexpected Letter- Two years passed since I wrote her and didn't receive a response. I believed I had lost another friend, this time one of my dearest, sweet Jody, to divorce and change. Then, out of nowhere, I woke to find a long and wonderful letter from her. It was one of those clutch your laptop to your chest moments. Fourteen years of schooling cooperatively, field trips, travels with eight children, and sometimes others all gathered in happy camaraderie; these are memories not easily forgotten and so we pick ourselves up and start again.

Estos son recuerdos no fácilmente olvidados y así ella y yo después de los años perdidos nos levantamos y empezamos de nuevo.

Abundant and Delicious Meals prepared by Chef Enrique with love. And after 2 1/2 years of living in Spain, I've finally discovered through one of my high school students an organic food co-op. Tuesday Farmer's Market is wonderful, but being able to get lots more organically grown produce is exciting.
Comidas Abundantes y Deliciosas preparadas por el Chef Enrique con amor. Y después de 2 años y medio viviendo en España, por fin he descubierto a través de uno de mis estudiantes de secundaria una cooperativa de alimentos orgánicos. El mercado de los martes es maravilloso, pero poder obtener muchos más productos orgánicos es emocionante.
The New Church in Astorga - work is continuing and its doors will hopefully open for Evangelical services this spring.
La Nueva Iglesia en Astorga - los trabajos para abrir continúan y sus puertas con suerte se abrirán para los servicios evangélicos en esta primavera.

True Apple Lovers meet Aebleskivers

We absolutely love apples. Apples are the best; they are wonderful most any way you slice them, fresh, juiced, baked, sauced, and in every way imaginable. In Spain we harvest as many as we're able through the fall, like from our nun friends' orchard this year, and then I make us and them pies throughout the winter.
Nos encantan las manzanas. Las manzanas son lo mejor. son maravillosas de cualquier manera que usted las prepare, frescas, convertidas en jugo, al horno, cocidas y en todas las formas imaginables. En España cosechamos tantas como somos capaces por el otoño, como este año de los árboles de nuestras amigas monjas, y luego hacemos nosotros y ellas tartas durante el largo del invierno.
Other delicious possibilities besides pie include apple waffles and  Apple Muffins made with my variation of almond milk, grated coconut with pecans and nutmeg topping. After baking they are irresistible with pumpkin butter toted home in our suitcases from Trader Joe's. The last batch provided enough muffins to freeze and then warm for breakfast on these early frosty morning in Astorga.
Otras deliciosas posibilidades, además de tartas, incluyen gofres de manzana y madalenas de manzana hechas con mi variante de leche de almendras, cobertura de coco rallado,  nueces y nuez moscada. Después de horneadas son irresistibles con mermelada de calabaza traida a casa en nuestras maletas desde Trader Joe's. El último lote proporcionó suficientes magdalenas para congelar y luego se calientan para el desayuno en esas tempranas mañanas heladas de Astorga.

But, if we're going to talk apples, this is the moment to mention, or better to revel in the memory of the best apple dessert I have ever had in my life. It was while we were staying with Celeste and Robb in Fair Oaks, California, to be exact. I think Robb must have casually mentioned Celeste's Aebleskivers (Scandanavian Pancake Puffs) at some point and we immediately scrambled to find a morning that would work for all four. And we weren't disappointed!
Pero si vamos a hablar de manzanas, este es el momento para hacerlo, o mejor para deleitarse en la memoria del mejor postre de manzana que he tenido en mi vida. Fue cuando Enrique y yo nos quedamos con Celeste y Robb en Fair Oaks, California. Creo que Robb debe haber mencionado casualmente los Aebleskivers de Celeste (escandinavos Pancake Puffs) y nosotros revolvimos imediatemente para encontrar una mañana que funcionara para los cuatro. Vaya ilusión nos hizo y nos quedamos alucinados!

Celeste, glorying in her Danish heritage, skillfully poured an eggless, dairyless version  of the doughnut-like batter into a cast iron pan that I'd noticed before, but never seen anyone use.  As they puffed out of their round molds she skillfully turned each one so the two sides were equally browned and laughingly stating that her grandmother would turn hers over with a knitting needle.
Celeste haciendo gala de su herencia danesa vierte hábilmente una versión de masa sin huevo y sin lácteos en una sartén de hierro fundido que yo había visto antes, pero nunca había visto usar. A medida que se hincharon de sus moldes redondos ella hábilmente volvió cada un para que las dos partes se dorasen por igual y, riendo, decía que su abuela lo hacía con una aguja de tejer.

Although we tried our first aebleskivers in the fall I've read they are a classic holiday breakfast or dessert. May all the happy aebleskiver eaters at Robb and Celeste's home this Christmas enjoy!

Beginning Advent This Year

So true. My small heart can hold a lot of gratitude. Well, sometimes. Ok. It's just that most of the time, I have to jot down those positive things, those happy seconds or moments and commit them to memory, read them and even meditate on them. If not, the emptiness that tears away at my heart during this season of family and tradition relentlessly stalks my joy, like the proverbial lion. Survival, therefore, is contingent on taking every single thought captive, discarding those thoughts of unbearable pain and instead, embracing each blessing at hand, no matter how small.

Muy cierto. Mi pequeño corazón puede albergar una gran cantidad de gratitud. Bueno, a veces. Ok, lo que pasa es que la mayoría de las veces, tengo que tomar nota de las cosas positivas, esos segundos o momentos felices y memorizarlos, leerlos e incluso meditar sobre ellos. Si no es así, si no lo hago, el vacío que desgarra mi corazón de la familia y la tradición durante esta temporada acecha implacablemente mi alegría, al igual que ese león de los proverbios. Por lo tanto, la supervivencia depende de someter cada pensamiento, desechando esos pensamientos de dolor insoportable y, en su lugar, aferrarse a las bendiciones que tenemos a mano, no importa cuán pequeñas sean.
Every year in Spain we've continued to make our Advent Prayer Rings,
these are from the first year, next to one of those melons with which Enrique makes the best angel hair jam.
Cada año en España hemos continuado haciendo nuestros Anillos de Oración de Adviento, éstos son los del primer año al lado de una de esas calabazas con las que Enrique hace el mejor cabello de ángel.
On December 1st my four kids and I always made colored paper rings to countdown to Christmas, taking off one ring a day and praying for the person whose name was inside.
This year's Advent will also be one of rings, but unlike other years, besides remembering loved ones in prayer, I've committed to writing on the other side of each ring at least one blessing from each day, just one significant, beautiful or interesting detail that made that day special.

El 1 de diciembre mis cuatro hijos y yo hacíamos siempre anillos de papel de colores para la cuenta atrás hasta la Navidad, quitando un anillo cada día y orando por la persona cuyo nombre estaba dentro. El Adviento de este año también será de los anillos, pero además de recordar a los seres queridos en la oración, estoy comprometida a escribir en el otro lado de cada anillo las bendiciones de ese día, sencillamente un detalle importante, bello o interesante que hizo ese día especial.

I question everything some days - my choices, my responses to others' choices, some over which I've had and others over which I have had no control, and I still don't understand purpose in it all. I don't see the meaning of God answering our prayers in such a bewildering way. And yet, this week I remembered Joseph, and Daniel and even Job. I'm quite sure they didn't know how or why when they were in the middle of the swirl. Just stop asking. Just look up. So, although it might be a colossal effort to be thankful, finding the blessing on some half-full days is what it's going to take. Courage for me is to say thank you and mean it, when the same gratitude is outweighed by pain.
But, making it public here will help.
So, blessings will come in the following posts this month.

Algunos días pongo en duda todo - mis decisiones, mis reacciones a las decisiones de otros, sobre las que no he tenido y no tengo control, y aún sigo sin entender el significado de todo ello. No veo el sentido que ha tenido Dios respondiendo a mis oraciones de manera tan desconcertante. Y, sin embargo, esta semana me acordé de José y Daniel, e incluso de Job. Estoy completamente segura de que no sabían el cómo ni el por qué, cuando estaban en el medio de la torbellino. Símplemente deja de preguntar. Basta con mirar hacia arriba. Así, a pesar de que podría ser un colosal esfuerzo el estar agradecida, encontrar la bendición en algunos días medio-llenos es lo necesario. La valentía para mí es dar las gracias y decirlo de verdad cuando dicho agradecimiento hecho a propósito es superado por el dolor. 
Sin embargo hacerlo público ayudará. 
Por esto en las próximas entradas de este mes vendrán los agradecimientos.

Sunday in Rabanal del Camino.

We began with a strong coffee that we sipped until parish bells called us to mass.

Mass in Rabanal del Camino, sung entirely in Gregorian chant, made me feel as if in another era. In reality these masses have never stopped being sung this way by Benedictine monks.
La misa en Rabanal de Camino, cantada en gregoriano, me hizo sentir como en otra época. En realidad estas misas en gregoriano no se han dejado de cantar de esta manera por monjes benedictinos.
